How much should a NYC hotel or restaurant spend on weekly flowers?
It's a question most operations managers google once, find no useful answer, and then make a gut call. This post gives you a working framework instead.
Start with the spaces that matter
Not every space needs fresh flowers every week. Before budgeting by the arrangement, inventory your property for what guests actually see:
- Front of house entry points: the lobby, host stand, front desk, bar entrance. These drive first impressions and justify the highest spend per arrangement.
- Dining room focal points: bar tops, reception surfaces, a single statement piece near the window. One arrangement in the right spot does more than five placed randomly.
- Back-of-house and service areas: these do not need fresh arrangements. If you are spending here, you are over-buying.
For most boutique hotels, the list is two to four distinct spaces. For a restaurant, it is typically one to three.
The cost per space, realistically
In New York City, a professionally sourced, property-appropriate weekly arrangement runs between $50 and $150 per space, depending on size and complexity. Here is how to think about each tier:
- $50/week per space: Appropriate for a compact arrangement at a host stand, a smaller side table, or a secondary surface. Clean, consistent, not a statement piece.
- $100/week per space: The working rate for a mid-size lobby arrangement or a dining room focal point. This covers a properly proportioned piece with quality stems, not grocery-store volume.
- $150+/week per space: For a large entrance arrangement in a hotel lobby with ceiling height and width to fill, or a centerpiece at a high-visibility restaurant bar. The cost reflects both the volume of stems and the sourcing quality.
These are not retail markups. They reflect the wholesale sourcing, weekly replacement, and delivery logistics that make subscription service work.
A rough total for common property types
Running the numbers across typical space counts:
Boutique hotel (2 to 3 spaces): $150 to $450/week, or roughly $7,800 to $23,400 annually. Most properties in this category run closer to the lower end and see strong return on impression relative to other lobby investments.
Upscale restaurant (2 spaces): $150 to $250/week. Given average cover counts and the visibility of the arrangement to every guest, the per-impression cost is low.
Multi-outlet property (4+ spaces): Volume typically unlocks a better per-arrangement rate. At four or more consistent weekly spaces, expect pricing to flatten slightly compared to the tiers above.
What you are not paying for in a subscription
The per-week cost covers sourcing, arrangement, and delivery. What it removes from your team's plate:
- Sourcing calls and vendor management
- Weekly approval of whatever the florist proposes
- Chasing a late delivery
- Disposing of old arrangements yourself
For a hotel operations team managing maintenance, housekeeping, and vendor coordination, the time savings typically justify the cost before the first arrangement arrives.
The common mistake: over-buying volume, under-buying placement
The most frequent budget misallocation in hospitality florals is spending on quantity (many small arrangements across the property) instead of spending on placement (fewer arrangements where guests actually look).
A single well-proportioned arrangement at your front desk creates a stronger impression than six small vases placed throughout the dining room. Before increasing your budget, audit whether your current spend is concentrated at the right points.
How to use this to set your own budget
A practical starting point:
- List every public-facing space where guests form a first impression.
- Assign each to the $50, $100, or $150 tier based on the size and visibility of the space.
- Sum the weekly total and multiply by 52 to see the annual commitment.
- Cut any space that is secondary until the annual number fits your operating budget.
Most NYC properties that go through this exercise land between $200 and $500 per week for their meaningful spaces. That range is where a subscription service is both practical and cost-justified.
